“ I've known Parker long enough to appreciate both his approach to BBQ and his execution. Catering is not easy - even with a food truck kitchen / smoker. Parker buys good ingredients and blends the meat, the sides and the dips / relishes to fit the menu. If you were wondering what the "Barks" part of the name is, here is the answer: "Bark is the combination of the spices that you rubbed on your meat and the smoke from your smoker, combining with the meat protein in a chemical reaction. Good bark on a brisket or pork shoulder will make the meat flavor out of this world" Parker is 'creatively grounded' meaning he thinks about the entire menu and the flavors of each item. No one item overpowers another - you won't find yourself eating a plate where every item competes with the others. It's a thought-out BBQ ballet (tbh I just made that up but it's true). I went to an outdoor dinner where Parker did a Spanish Parilla - splayed whole lamb and pig. Over a wood fire. There is no 'recipe' for this...it's all about getting a good fire, searing the meat, then backing off and allowing it to cook to the proper temperature. Takes due diligence and a watchful eye. His kitchen staff are all experienced and friendly. Give Parker a call / email and challenge him - I know he will come through for you (your winery / company / wedding...) ”

“ found his food truck at lodi ca farmers market, every Thursday. The BEST brisket since I moved from Texas. (hard to beat the Austin/San Antonion overnight Brisket BBQers). That being said the meat had that pinkish layer on both ends and melted in your mouth. I know he cooks it overnight--outside (as opposed to bakers in ovens who put sauces on them) as I learned in Texas that is the only way to get the taste, no sauces needed, but he gives you some anyway. “ I was lucky enough to find Parkbarks BBQ to cater my wedding for 75 guests. He was more than willing to change the menu a bit for my requests. The food was excellent and they were so efficient and organized. I felt so fortunate to have found Parker. Everyone raved about the food and either got his business cards or took pictures of the name and phone number on his truck. I hope to use him again. He definitely made my day amazing. ”
“ Got the chance to try out this amazing food truck while they were at the Lodi Street Faire. A coworker recommended them to me and I will be eternally grateful that he did. I'd been craving some good BBQ and these guys seriously delivered. We tried the rib tips, macaroni salad and the BBQ baked beans. Rib tips were tender with a sweet bbq sauce which is what I prefer. Macaroni salad was a little on the sweet side as well with crunchy fresh chopped red peppers in it. But the absolute star of the show were the beans-sweet, a bit spicy and smoky, they had bits of pineapple, sliced jalapeños and chucks of brisket-PHENOMENAL. The dish that everyone seemed to be ordering was the brisket fried rice which I dropped the ball on. However, now that I know about this truck I will definitely be visiting them again in the near future! It was obviously a popular truck as they had a constant line but they got the orders out quick and efficiently and service was super friendly. Prices were what I expected for good bbq. I highly recommend checking them out if you're into really great BBQ. ”
“ I came across this place at the Lodi Street Faire and I'm a sucker for barbecue so I knew I had to give them a try. First they quite the line which was a great indication that they were serving up some great bbq, then I saw the championship trophies and then after I looked at the reviews I knew I was in for a treat. They have a great menu with a variety of options. They have pulled pork sliders, smoke roasted chicken, ribs, brisket sandwich, wings, breakfast burritos and then a slew of sides. What caught my eye was their special Rib Tips, these are so hard to come by so there's no way I could've passed on them. I also ordered a side of their macaroni salad. The rib tips were cooked to perfection, they were very tender and seasoned well and that sauce had a nice sweet, savory and smokey flavor. These were probably the best rib tips that I've ever had and they give you a nice amount for the price. The macaroni salad was very good as well, it had a bit of a kick and the bell peppers gave it a nice flavor and crunch. One of the better macaroni salads that I've had as well. The customer service is also great, the staff here are very friendly and the prices are decent considering it's barbecue. I'll be back if I happen to be back in the area and find their truck again. ”

“ Super tasty food truck that has selections of BBQ. They came to my work to cater us for the holidays. I had the Salt and Pepper Brisket sandwich with pickled red onions, the fingerling potatoes, and the harvest pasta, which was a seasonal side. I also tried my friends sliders and BBQ pork ribs, and the fudge brownie. Everything tasted great and Parker was super nice as well as the rest of the crew. Definitely check it out! ”
